Easy creamy One-Pot Chicken & Rice

A comforting, one-pot meal that’s hearty, easy to make, and perfect for busy weeknights. It’s kid-friendly, budget-friendly, and nourishing — with minimal cleanup.

Ingredients (Serves 4):

  • 1 tbsp olive oil
  • 2 chicken breasts, diced
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 cup uncooked rice (white or brown)
  • 2 cups chicken broth
  • 1/2 cup carrots, diced
  • 1/2 cup frozen peas
  • Salt & pepper to taste
  • 1 tsp dried parsley
  • 1/3 cup plain Greek yogurt or cream (optional, for creaminess)

Instructions:

  1. Heat olive oil in a large pot or deep skillet. Add chicken, season with salt and pepper, and cook until browned.
  2. Add onions and garlic. Sauté until soft and fragrant.
  3. Stir in uncooked rice, carrots, and peas. Pour in chicken broth and bring to a boil.
  4. Reduce heat, cover, and simmer for 15–20 minutes (or until rice is cooked).
  5. Remove from heat and stir in Greek yogurt or cream if using. Mix gently to make it creamy and flavorful.
  6. Serve warm with a side salad or cucumber sticks.

Mom Tip:

Add extra veggies like zucchini or bell pepper if you have them — the rice absorbs all the flavor!
