Easy Chicken Salad Bowl
Ingredients (Serves 2–3):
Base:
- 2 cups mixed greens (e.g., romaine, spinach, arugula)
Toppings:
- 1 grilled chicken breast, chopped
- 1/2 avocado, sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup mango, diced
- 1/4 cup red cabbage, shredded
- 1/4 cup cooked potatoes or roasted sweet potato cubes
- 1/4 cup cucumber, diced
- 1/4 cup corn kernels (fresh or canned)
- 1/4 cup diced red bell pepper
- 1/4 cup cooked edamame or green peas
- Optional: cubed grilled halloumi or feta for extra flavor
Simple Honey-Mustard Dressing:
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tsp honey (or maple syrup)
- 1 tbsp apple cider vinegar
- Salt & pepper to taste
Or if you like other dressings you can make the one you prefer
Instructions:
- Place your mixed greens as the base in a large bowl.
- Arrange the toppings in colorful sections for a vibrant look.
- Whisk together all dressing ingredients until smooth.
- Drizzle dressing over the bowl just before serving.
- Toss gently or serve as-is for that beautiful presentation.
