Ingredients (Serves 2–3):

Base:

  • 2 cups mixed greens (e.g., romaine, spinach, arugula)

Toppings:

  • 1 grilled chicken breast, chopped
  • 1/2 avocado, sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup mango, diced
  • 1/4 cup red cabbage, shredded
  • 1/4 cup cooked potatoes or roasted sweet potato cubes
  • 1/4 cup cucumber, diced
  • 1/4 cup corn kernels (fresh or canned)
  • 1/4 cup diced red bell pepper
  • 1/4 cup cooked edamame or green peas
  • Optional: cubed grilled halloumi or feta for extra flavor

Simple Honey-Mustard Dressing:

  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tsp honey (or maple syrup)
  • 1 tbsp apple cider vinegar
  • Salt & pepper to taste

Or if you like other dressings you can make the one you prefer


Instructions:

  1. Place your mixed greens as the base in a large bowl.
  2. Arrange the toppings in colorful sections for a vibrant look.
  3. Whisk together all dressing ingredients until smooth.
  4. Drizzle dressing over the bowl just before serving.
  5. Toss gently or serve as-is for that beautiful presentation.

Tips:

  • For meal prep: store ingredients separately and assemble before eating.
  • Add crunch: sprinkle with toasted nuts, seeds, or crispy chickpeas.
