Best mini Veggie Quesadillas (Kid-Approved!)
These cheesy, colorful quesadillas are fun to make and easy to eat. They’re packed with hidden veggies, perfect for picky eaters, and great for lunchboxes or quick dinners.
Ingredients (Makes 4 mini quesadillas):
- 4 small whole wheat tortillas
- 1/2 cup shredded carrot
- 1/4 cup finely chopped spinach or zucchini
- 1/2 cup shredded mozzarella or cheddar
- 1 tsp olive oil or butter for cooking
- Optional: a pinch of cumin or paprika
Instructions:
- In a bowl, mix the veggies and shredded cheese. Add seasoning if using.
- Spread the mixture on half of a tortilla and fold it in half (like a half-moon).
- Heat a skillet with a little oil or butter. Cook each quesadilla for 2–3 minutes per side, until golden and the cheese is melted.
- Let cool slightly, then cut into triangles.
Serve with a side of yogurt or guacamole. Let your kids help build their own — it’s a great way to get them to eat more veggies!
