SUPER EASY Roasted Veggie & Lentil Nourish Bowl

This high-fiber, plant-based bowl is packed with roasted veggies, protein-rich lentils, and a creamy tahini dressing. It’s gentle on digestion and perfect for lunch or dinner.

Ingredients (Serves 2):

  • 1 cup cooked green lentils (or canned, drained)
  • 1/2 sweet potato, cubed
  • 1/2 zucchini, sliced
  • 1/2 red bell pepper, chopped
  • 1 carrot
  • 1/2 small red onion, cut into wedges
  • 1 tbsp olive oil
  • Salt, pepper, paprika to taste
  • A handful of baby spinach or arugula

Tahini Dressing:

  • 1 tbsp tahini
  • Juice of 1/2 lemon
  • 1 tsp maple syrup or honey
  • 1–2 tbsp water to thin

Instructions:

  1. Preheat oven to 200°C (400°F). Toss sweet potato, zucchini, bell pepper, and onion with olive oil, salt, and paprika.
  2. Spread on a tray and roast for 20–25 minutes until tender and golden.
  3. In a bowl, layer lentils, roasted veggies, and greens.
  4. Mix tahini dressing ingredients and drizzle on top. Serve warm or cold.
