SUPER EASY Roasted Veggie & Lentil Nourish Bowl
This high-fiber, plant-based bowl is packed with roasted veggies, protein-rich lentils, and a creamy tahini dressing. It’s gentle on digestion and perfect for lunch or dinner.
Ingredients (Serves 2):
- 1 cup cooked green lentils (or canned, drained)
- 1/2 sweet potato, cubed
- 1/2 zucchini, sliced
- 1/2 red bell pepper, chopped
- 1 carrot
- 1/2 small red onion, cut into wedges
- 1 tbsp olive oil
- Salt, pepper, paprika to taste
- A handful of baby spinach or arugula
Tahini Dressing:
- 1 tbsp tahini
- Juice of 1/2 lemon
- 1 tsp maple syrup or honey
- 1–2 tbsp water to thin
Instructions:
- Preheat oven to 200°C (400°F). Toss sweet potato, zucchini, bell pepper, and onion with olive oil, salt, and paprika.
- Spread on a tray and roast for 20–25 minutes until tender and golden.
- In a bowl, layer lentils, roasted veggies, and greens.
- Mix tahini dressing ingredients and drizzle on top. Serve warm or cold.
