Easy creamy One-Pot Chicken & Rice
A comforting, one-pot meal that’s hearty, easy to make, and perfect for busy weeknights. It’s kid-friendly, budget-friendly, and nourishing — with minimal cleanup.
Ingredients (Serves 4):
- 1 tbsp olive oil
- 2 chicken breasts, diced
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 cup uncooked rice (white or brown)
- 2 cups chicken broth
- 1/2 cup carrots, diced
- 1/2 cup frozen peas
- Salt & pepper to taste
- 1 tsp dried parsley
- 1/3 cup plain Greek yogurt or cream (optional, for creaminess)
Instructions:
- Heat olive oil in a large pot or deep skillet. Add chicken, season with salt and pepper, and cook until browned.
- Add onions and garlic. Sauté until soft and fragrant.
- Stir in uncooked rice, carrots, and peas. Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 15–20 minutes (or until rice is cooked).
- Remove from heat and stir in Greek yogurt or cream if using. Mix gently to make it creamy and flavorful.
- Serve warm with a side salad or cucumber sticks.
Mom Tip:
Add extra veggies like zucchini or bell pepper if you have them — the rice absorbs all the flavor!
