🥘 One-Pan Chicken & Veggie Dinner

Ingredients (Serves 4):
- 2 chicken breasts or thighs, cut into bite-sized cubes
- 1 red bell pepper, sliced
- 1 zucchini, chopped
- 1 carrot, thinly sliced
- 1 small red onion, cut into wedges
- 1 cup broccoli florets
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried oregano or thyme
- Salt & pepper to taste
- Optional: squeeze of lemon juice for freshness
Instructions:
- Preheat oven to 200°C (400°F).
- Place all ingredients on a large baking tray or sheet pan lined with parchment.
- Drizzle with olive oil and sprinkle with all the spices. Toss everything to coat well.
- Spread out into a single layer so veggies and chicken cook evenly.
- Bake for 25–30 minutes, flipping halfway through, until chicken is golden and cooked through.
- Serve hot, as-is or over rice, couscous, or quinoa.
