🥘 One-Pan Chicken & Veggie Dinner

Ingredients (Serves 4):

  • 2 chicken breasts or thighs, cut into bite-sized cubes
  • 1 red bell pepper, sliced
  • 1 zucchini, chopped
  • 1 carrot, thinly sliced
  • 1 small red onion, cut into wedges
  • 1 cup broccoli florets
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried oregano or thyme
  • Salt & pepper to taste
  • Optional: squeeze of lemon juice for freshness

Instructions:

  1. Preheat oven to 200°C (400°F).
  2. Place all ingredients on a large baking tray or sheet pan lined with parchment.
  3. Drizzle with olive oil and sprinkle with all the spices. Toss everything to coat well.
  4. Spread out into a single layer so veggies and chicken cook evenly.
  5. Bake for 25–30 minutes, flipping halfway through, until chicken is golden and cooked through.
  6. Serve hot, as-is or over rice, couscous, or quinoa.
